What exactly does the vow of "chastity" that nuns take, mean?

Does it mean that they must abstain from all sexual intercourse with others? Or does it mean abstaining from all sexual stimulation altogether?

    They must abstain from all sexual intercourse and all sexual stimulation

    In the context of a religious, it means that all sexual desire is "offered up" as a mortification to them and a sacrifice to God.

    It means that they are spiritually married to Jesus and yes, they cannot have sex since their love is already dedicated to Jesus.
